2020 Sang de Pigeon Shiraz, Barossa Valley

Sang de Pigeon (pigeon’s blood) is a nod to my former life as a jewellery valuer. It’s the trade term for the colour of the finest rubies, invariably from the Mogok Stone Tract in Myanmar. The precious grapes for this fragrant and deeply coloured wine were grown far to the south-east, in South Australia’s Barossa Valley.
Low rainfall throughout winter and the subsequent growing season led to very small crops. Hand-picked from four vineyards in Stone Well, Greenock and Krondorf, 6% whole-bunch barrel fermented, the remainder destemmed to open fermenter. Pressed to French oak (31% new), 20 months maturation in barrel. Fined and filtered.
